I’m Guillemette, a French pastry chef trained in Paris, France.
I grew up in different countries – France, the Netherlands, Italy and Tunisia, which led me to discover many different tastes, food cultures and customs at a young age.
In every culture, sweet foods, whatever they look like, bring people together for a party, a celebration. People give cookies and cakes as a gift, and desserts are often a way to treat friends and family or to make a good impression on strangers. Their mission : make people happy.
This led me to Pastry School. I learned the techniques and secrets of French Pastry and graduated from the famous Ferrandi Culinary School in Paris in 2007. And because I love to learn, I also went back to school to study Tourism and Gastronomy where I wrote a fun Memoir about Pastry Tourism in Paris for my Master’s degree.
I worked in different restaurants and catering companies, then spent more than 5 years teaching pastry in Paris in different cooking schools and at people’s homes, in English and in French, playing with flour, butter, sugar and eggs, having fun, talking about the French food culture, and sharing my passion.
The sweet adventure of L’Ecole Gourmande started in the SF South Bay in July 2016. I hope you will be part of it!
I believe that baking – and cooking in general – from scratch should be part of every child’s education as it teaches to respect ingredients, seasons, other people’s hard work and promotes a healthy lifestyle.
